Tacos De Fajitas Recipe From White Stallion Ranch

This summer make this easy yummy dish from White Stallion Ranch. Marinate the meat the day before and within 15 minutes you will have dinner on the table. The meat is so flavorful and the simplicity of the dish is what makes it special. White Stallion Ranch is an Arizona dude ranch where the personal touch and hospitality of a traditional dude ranch is carefully blended with the service and quality of a fine resort. Serves 4

Marinade:

1 cup canola oil
½ cup fresh lime juice
 2 Tbs. minced garlic
2 Tbs. chili powder
 2 lb. jaccarded *flap

meat steak, cut width-wise into 3” pieces Canola oil-use as needed
2 large yellow onions, peeled
2 limes cut in half
6” flour tortillas (warm)

Directions:

  1. Marinate the meat overnight.  The next day, remove the meat from the marinade.  Strain and refrigerate the marinade so it can be used another time.  Prepare a hot mesquite or charcoal fire and sear the meat to a rate to medium-rate.  Slice the meat with the grain to get 1/3” x 1/3 x 1” strips.
  2. Thinly slice the onions and halve them.  Halve the peppers through the stem.  Remove the stems and slice the peppers, though not as thin as the onions.
  3. When ready to serve, add oil to a hot griddle.  Sear the onions for a few minutes, stirring often.  Then add the peppers and sear another couple of minutes.  The onions should be browned but the peppers not limp.  Keeping the griddle hot, add the meat with just enough oil so it doesn’t stick.  Mix everything well.  Stirring often, sea the meat until it is done the way you like it.  Then squeeze the limes onto the fajitas which creates the charateristic steam and sizzle.  If you are using a cast iron skillet instead of a griddle, wait and squeeze the limes onto the fajitas at the table.
  4. Serve immediately with the warm tortillas, guacamole, El Charro beans, and pico de gallo or your favorite salsa.
*Flap meat is a bottom sirloin.  As your butcher to jaccard it which tenderizes it.  You can buy a small jaccarder at the culinary shop and do it yourself.  Traditionally, skirt steak is used in the Tex-Mex version of fajitas.

This is a great dessert for summer outdoor dining brought to you from the folks at Lazy L&B Ranch. Serves 12

Galette

12 pieces of puff pastry
 1 cup butter, melted
 4 to 6 cups of the fruit(s) of your choice, sliced
 2 cups brown sugar

Directions

  1. Preheat oven to 350F.
  2.  Lightly score a border around the entire edge with a paring knife and then prick everything inside this border with a fork.
  3. Brush each piece with a generous helping of butter.
  4. Place the buttered pastry in the oven for five minutes or just until it begins to rise.
  5. Take the pastry out of the oven and arrange your fruit(s).
  6. Sprinkle brown sugar over the fruit.
  7. Return to the oven for another 10 minutes or until the pastry is golden brown.
Sauce

2 cups brown sugar
 Splash of water
 1/2 cup red wine
 2 cups unsalted butter,
divided into 12 pieces

Directions

  1. Heat the brown sugar with a bit of water over medium heat.
  2. Add the red wine and stir slowly.
  3.  Once the sugar and wine is incorporated, incorporate the butter one piece at a time and simmer until the sauce thickens slightly.
  4. Drizzle the sauce over the galettes.

These easy Chocolate Chip Cheesecake Bars are brought to us by the lovely folks over at Shangrila Guest Ranch in Virginia. This recipe is so easy and try it with the kids. They will love to help out and mix the dough!

Chocolate Chip Cheesecake Bars
Chocolate Chip Cheesecake Bars

Ingredients:
 2 rolls (20-30 ounce)
Pillsbury chocolate chip cookie dough
2 packages (8 ounce) cream cheese
2 eggs
1 cup sugar
1 teaspoon vanilla

Directions:  

  1. Preheat oven to 350' degrees.  Spray a 13x9 inch baking pan with cooking spray.
  2. Spread 1 package of cookie dough in bottom of pan.
  3. In a bowl, mix together softened cream cheese, eggs, sugar and vanilla.  Spread over top of cookie dough.
  4. Gently crumble the 2nd package of cookie dough over the top of the mixture.
  5. Bake in preheated oven 35-40 minutes.  Chill in refrigerator at least 1 hour.  Cut into squares. Makes 18-24 squares.

The Red Reflet Guest Ranch in Ten Sleep, Wyoming offered a series of cooking classes during the winter of 2014.  The classes included instruction from Executive Chef Matthew Cariveau and Pastry Chef Stephanie Shaw.

Last week's class was "Southern Comfort Cooking" and featured Hickory Smoked Fried Chicken, Cornbread Waffles and Southern Greens to name a few.  One of the favorite recipes of the class was Red Reflet's Homemade Biscuits, and the chefs are happy to share the recipe.  Enjoy!

Homemade Biscuit Recipe
Red Reflet Homemade Biscuits

Ingredients
 2 Cups Flour
2 Teaspoons Baking Powder
1 Teaspoon Salt
4 oz. Cold Cubed Butter
¾ Cup Sour Cream
¼ Cup Heavy Cream
2 Teaspoons Sugar

Directions:

  1. Preheat oven to 400 degrees F.
  2. Mix together flour, baking powder and salt. Cut in butter until it resembles fine cornmeal.
  3. Then Add the sour cream, heavy cream and sugar.
  4. Mix until blended and add any extra special ingredients to the mix.  You can get creative here with flavors you enjoy.  We add a handful of sliced jalapenos and a handful of aged sharp cheddar.
  5. Empty bowl onto floured table and and then flatten on table.
  6. Cut into biscuits using cutter.
  7. Brush liberally with cream.
  8. Bake at 400 degrees until light brown and internally 170 degrees.
