Cowboy French Toast Recipe

Everyone loves French Toast. It’s soft, sticky and sweet with a bit of crunch. It’s simple to make and only takes minutes to prepare. Plus, the ingredients are simple and most kitchens have them on hand. Perhaps these are reasons why it’s a favorite among cowboys who start their day early and need a quick yet hearty breakfast. This French toast recipe uses thick cut bread. You can use Challah bread for a bit of sweetness or a regular loaf (white or whole wheat) and cut your own thick slices. This gives the French toast more structure and makes it less probable to get soggy. The cowboys like it this way!

Cowboy Friend Toast

Ingredients:
6-8 slices sandwich bread
2 eggs
3/4 cup of milk (homo or 2%)
1 teaspoon sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
butter for cooking
confectioners sugar for dusting (optional)

Directions:

Whisk together the eggs, milk, sugar, vanilla and cinnamon in a shallow dish until blended.

Heat a large frying pan or skillet  and melt bit of butter. Coat a slice of bread on each side and place into pan. Cook until golden on both sides (about 2-3 min on each side). Remove and repeat with the rest of the bread. Dust with confectioners sugar and serve warm with maple syrup.

Summertime is BBQ time and what's better on some grilled salmon is some fresh and tangy mango salsa. The folks over at Colorado Trails Ranch were nice enough to share their recipe for mango salsa. Try it over some grilled fish for some added freshness and flavor. Also, serve it with tortilla chips for scooping! Mango Salsa

INGREDIENTS:

1 mango chopped
¼ fresh pineapple chopped (approximately – use less quantity than the mango)
Some diced red onion
Some diced cilantro
A squeeze of orange
A squeeze of lime

DIRECTIONS

  1. Toss all the ingredients together and enjoy. Serve chilled.
PS:Can sweeten with a small amount of honey if needed or can add some chopped jalapeno if desired
