Do you Like to Cook?Try These White Stallion Ranch Recipes

At White Stallion Ranch, the personal touch and hospitality of a traditional dude ranch is carefully blended with the service and amenities of a fine resort. While staying at White Stallion Ranch you will be treated to delicious home-cooked meals prepared by the ranch’s chef as well as healthy snacks.  Here are just a few to try out at home.

Spicy Granola

  (1batch)                                                                           (double batch)

4 cups old-fashioned rolled Oats                                                8c

1 cup unsweetened desiccated coconut*                                    2c

1 cup sliced almonds                                                                  2c

1 cup pecans                                                                              2c

1 ½ tsp. Cinnamon                                                                    3t

½ tsp. Nutmeg                                                                           1t

1 stick (1/2 cup) unsalted butter and ½ cup honey                   1c marg + 1c honey

2 cups mixed dried fruits such as cranberries, cherries,         3 or 4 c for taste

currants, golden raisins, apricots, prunes and/or dates    

¾ cup brown sugar, packed                                                 1 1/2 c

*Available at natural food stores

Preheat oven 350 degrees

In a large bowl stir together oats, coconut, nuts and spices.  In a small saucepan melt butter with honey over low heat, stirring occasionally.  Pour butter mixture over oat mixture and toss to combine well.  Mix in brown sugar well.

Spread granola evenly in 2 shallow baking pans and bake in upper and lower thirds of oven, stirring frequently and switching position of pans halfway through baking, until golden brown, about 15 minutes.  In large bowl, combine granola with dried fruits and cool, stirring occasionally.  (Granola keeps in an airtight container, chilled, 1 month.)

Makes about 10 cups.

TRAIL MIX

2  lbs. Peanuts (dry roasted, etc.)

1  8-1/2 ounce pkg. pretzel chips (use air crisps if you can’t find pretzel chips)

1  7 ounce pkg. small twisted pretzels

1  5-3/4 ounce pkg. thin pretzel sticks

1  5.6 ounce pkg. corn nuts

1  cup vegetable oil

1  cup melted butter

2  Tbsp. chili powder

2  Tbsp. Worcestershire sauce

5  drops green Tabasco sauce

1  Tbsp. garlic salt

1  Tbsp. Lowrie’s seasoned salt

1  tsp. ground cumin

Mix nuts and pretzels in large roasting pan.

Mix oil and melted butter, chili powder, Worcestershire, Tabasco sauce, garlic salt, seasoned salt and cumin; pour over pretzels, mixing well.

Bake in a 350º oven for 1 hour, stirring often.  (If you use air crisps instead of pretzel chips then only add them the last 20 minutes of baking)

Old Wild West Style Cooking!

The Old Wild West conjures up visions of dusty towns, rolling tumbleweed, rowdy saloons, good time gals, sheriffs sporting six-point star silver badges, notorious outlaws and good ole cowboys. What is often overlooked is the hearty western cuisine that was prepared by the ranch’s cook during that era.  After completing a grueling day of wrangling cattle and working out on the range, the American cowboy would have worked up quite an appetite!  In those days, the ranch cook wielded a tremendous amount of power, so it was always wise to stay on his good side. His mood could determine whether the cowboys ate well or not that day. The quality of his food also played an important role in attracting top hands to a ranch, since other than getting a good night’s sleep there was nothing more important than being served up a top-notch meal at the start and end of each day. 

Western cooking entailed much more than baked beans cooked over an open fire. Below are just a few recipes that the American cowboy might have enjoyed after a long day in the saddle out herding cattle!

Sonofabitch Stew

This was a favorite beef stew dish among cowboys of the America West. It was also known as rascal stew or by the name of some unpopular figure of the time. For example, some cowboys called it Cleveland Stew in (dis)honor of President Grover Cleveland displacing cowboys from the Cherokee Strip. If you’re not into eating animal organs, pass this one up. However, if you want to put some hair on your chest, belly up to the table and pound this meal down.

2 pounds of lean beef

Half a calf heart

1 ½ pounds of calf liver

1 set sweetbreads (that’s the thymus gland for you city slickers)

1 set of brains

1 set of marrow gut

Salt, pepper to taste

Louisiana hot sauce

Cut the beef, liver, and heart into one-inch cubes. Slice the marrow gut into rings. Place these ingredients into the Dutch oven and cover with water. Let it simmer for 2 to 3 hours. Add salt, pepper, and hot sauce. Chop sweetbreads and brains into small pieces and add to stew. Simmer another hour.

Buffalo (or beef) Steaks with Chipotle-Coffee Rub

Ingredients:

3 teaspoons ground coffee

3 teaspoons ground chipotle pepper (or chipotle chile powder)

1/4 cup paprika

2 teaspoons toasted cumin seeds

3 tablespoons sugar

1 tablespoon salt

4 buffalo or beef steaks (8 ounces each)

Combine coffee, ground chipotle, paprika, cumin seeds, sugar and salt. Rub mixture into steaks.  Grill steaks until desired doneness.  Makes four servings.

Cowboy Coffee

Out on the trail, coffee was a staple among cowboys. Piping hot coffee helped a cowboy shake off the stiffness from sleeping on the hard desert ground, and it was also a good beverage to wash down the morning sour dough biscuits.  But cowboys didn’t have the luxury of fancy coffee brewers or french presses. They had to pack light, so all they usually had was a metal coffee pot, sans filter, to brew their coffee in. No matter. A cowboy could still make a decent cup of coffee. Here’s how.

1. Bring water to a near boil over your campfire.

2. Throw your coffee grounds right into the water. That’s right. Filters are for city slickers.

3. Stir the coffee over the fire for a minute or two.

4. Remove the pot from the fire and let the coffee sit for a minute or two to allow the grounds to settle at the bottom of the pot. Add a bit of cold water to help speed along the settling process.

5. Carefully pour the coffee into your tin cup so that the grounds stay in the pot.

6. Stand around the fire with your left thumb in your belt loop and your coffee cup in your right hand. Take slow sips and meditate on the trek ahead.

Thank you White Stallion Ranch for once again sharing one of your ranch recipes with RanchSeeker fans!! Be sure to check out other recipes provided by this Arizona guest ranch. Great food is always an important part of any vacation.

What do you prefer most breakfast, lunch or dinner? For breakfast lovers here is a recipe that is sure to kick start your day off just right!


Hatch Green Chili & Cheese Breakfast Casserole

Hatch Green Chili and Cheese Breakfast Casserole

12 lg. eggs

1- 1 1/2 lbs shredded Monterey Jack cheese

1-1 1/2 lbs. shredded cheddar cheese

2 cups diced green hatch chilies

1/4 c. chopped red roasted red peppers

1/4 c. heavy cream

3 T. flour

Salt and pepper to taste


Mix eggs, flour, cream, and salt and pepper in bowl.

Layer the jack cheese in 9×13, greased baking dish

Sprinkle chilies and peppers on top of jack cheese.

Layer the cheddar on top of all ingredients.

Pour egg mixture over cheese and chilies

Cover with foil and bake @350 for 40 minutes, uncover and finish baking until set

(about 15-20 minutes more)

Remove from oven let cool a bit cut into squares and serve with salsa, sliced tomatoes and avocados.

White Stallion Ranch’s Peanut Butter Bar Recipe

Visit the White Stallion Ranch an authentic western guest ranch nestled at the base of the beautiful Tucson Mountains on 3,000 acres of pristine Sonoran Desert. In the meantime enjoy this yummy recipe for Peanut Butter Bars provided by their chef.


Peanut Butter Bars

Preheat oven 350 degrees (300 convection oven)

¾ c. shortening

¾ c. peanut butter

1 c. brown sugar

1c white sugar

1 large egg

1 tsp. vanilla

1 ¼ c. flour

1 ¼ c. oatmeal

¾ tsp. baking soda

¼ tsp. salt

Cream the shortening, peanut butter, sugar, egg and vanilla well.  Mix together the flour, oatmeal, soda and salt.  Beat the flour mixture into the creamed mixture.  Spread the dough by hand over sprayed and floured 9”x13” baking pan.  Bake 25 minutes until still chewy.  Immediately sprinkle on the chocolate chips and spread over the bars when melted.

Topping

1 c. powdered sugar

½ c. peanut butter

1 c. chocolate chips

2-4 Tbs. Milk, as needed

Beat topping ingredients well, using enough milk to get a creamy consistency, then swirl over the chocolate.  Cut and serve.

Sundance Guest Ranch’s Summer Berry Salad with ‘Liquid Gold’ Dressing

The kind folks over at Sundance Guest Ranch have provided us with one of their treasured recipes to share on Ranchseeker. Sundance Guest Ranch, located in British Columbia, offers an all-inclusive package with accommodations, meals and about 5 hours of riding each day through some of the most spectacular countryside in the province. Prepare this delicious light summer salad for your family brought to you by the ranch’s very own Chef Lauren Chimilar and let us know how it turns out.


Summer Berry Salad with ‘Liquid Gold’ Dressing:

 1/3 cup apple cider vinegar

1/3 cup soy sauce

1/3 cup water

4-6 garlic cloves

3/4 cup nutritional flake yeast

1.5 cup vegetable oil

*Blend the first 5 ingredients in a blender or food processor. Slowly add oil while still blending*

*The salad uses a fresh artisan lettuce blend, goat cheese, toasted pine nuts, sweet yellow peppers, cucumber, blackberries and raspberries*
